Apple Pecan Chicken

1. Heat pan to medium high. Prepare chicken breast by cutting them in half.
2. In a bowl combine 2 BOU Cinnamon and Coconut Miso Seasoning Cubes, cumin, and salt. Rub chicken with spices.
3. Add 2 tbsp olive oil to pan and cook chicken for 2 to 3 minutes. When chicken is almost cooked set aside.
4. Peel and chop apples and pecans. Add 1 tbsp of olive oil to a new pan along with BOU Roasted Garlic cube, 1 BOU Cinnamon and Coconut Miso Seasoning Cube and apples and pecans. Cook for 3 to 4 minutes until apples are soft. Mix to incorporate spices.
5. Pour in coconut milk, apple cider vinegar and stir to incorporate flavors. Add chicken breast into pan with apples and pecans. In a small bowl combine cornstarch and water. Then pour into pan.
6. Continue to cook for 4 minutes, covered with a lid. Sauce should thicken and chicken should be fully cooked. Enjoy with white rice or vegetables.
