Beef enchiladas are the epitome of a beefed up weeknight meal. Hearty, cheesy and a little bit carby. This recipe for beef enchiladas features ground beef, Monterrey Jack cheese and BOU Beef Flavored Bouillon in the meat mixture and Vegetable Flavored Bouillon Cubes in the sauce. Lots of yum in this simple and satisfying recipe.

1. Preheat oven to 350 degrees.
2. Chop white onion and shred monterey jack cheese.
3. Warm enchilada sauce in saucepan and place vegetable bouillon until dissolved; set aside.
Cook ground beef in skillet, add chopped onion and crumble beef bouillon. Add ½ of enchilada sauce into cooked beef and stir together.
Spoon beef mixture onto the tortillas, roll up and place in baking dish. Drizzle remaining enchilada sauce and top with leftover cheese and beef.
6. Cook for 20 minutes and enjoy!
