1. Preheat oven to 350 degrees.
2. Chop white onion and Shred monterey jack cheese.
3. Warm up enchilada sauce in saucepan and place vegetable bouillon until dissolved; set aside.
Cook ground beef in skillet, add chopped onion and crumble beef bouillon. Add ½ of enchilada sauce into cooked beef and stir together.
Spoon in the beef mixture onto the tortillas, roll up and place into baking dish. Drizzle remaining enchilada sauce and top with leftover cheese and beef.
6. Cook for 20 minutes.
