Grilled Romaine Salad with Miso Ginger Dressing

½ lemon juiced
1 tbsp honey
2 tbsp EVOO
2 tbsp water
2 garlic cloves, minced
½ cup corn
1 head romaine lettuce
½ avocado
1. In small (microwave safe) mixing bowl, combine all dressing ingredients. Whisk to combine & place in microwave for 30 seconds. Remove, whisk to combine again & let sit for 5-10 minutes or until cooled.
2. While dressing is cooling, head grill pan over medium-high heat. Slice romaine in half & place back side onto grill pan for 3-5 minutes, or until brown lines form on lettuce. Flip & repeat on the other side.
3. Plate the romaine. Toss corn with the dressing & drizzle onto romaine. Add cubed avocado, serve & enjoy!
