One Pan Sweet Potato Hash by @lindseyeatsla


  • 1 white onion
  • 3-4 sweet potatoes 
  • 2 zucchinis
  • 1/2 tsp salt 
  • 1/2 tsp pepper 
  • 1 tsp garlic 
  • 1 tsp paprika
  • 6 eggs 
  • 1 BOU Mushroom Gravy Cube
  • 1 can corn
  • 3 jalapeno's 
  • 3 T olive oil
  • 1 avocado (for garnish) 
  • bundle cilantro (for garnish) 
  • 1 lime 


  1. Start by preheating your oven to 400 degrees and cube and slice your ingredients: onion, sweet potato, corn and zucchini. Mix together with 3 T olive oil, salt, pepper, garlic and paprika. Cook until browned, crisped and cooked through, about 30-40 minutes. 
  2. When ready, make small wells in the center of the pan for the eggs - crack and place back in the oven for about 10-15 minutes until eggs are fully cooked.
  3. Whisk your BOU Mushroom Gravy Cube with 1/2 of boiling water and drizzle on gravy, leaving some on the side for dipping as well. Garnish with sliced jalapeños, avocado, cilantro and lime juice.
