INGREDIENTS

For the hash browns

1 russet potato

1 tbsp all purpose flour

1 BOU Beef Cube

2 tbsp Parmesan cheese, shredded

1 tbsp chives, chopped

1 large egg

¼ cup ghee or unsalted butter

For the heart-shaped bacon

6 strips uncooked bacon

For the egg-in-a-hole

2 thick slices multigrain bread

2 large eggs

Salt and pepper, to taste

Serve with

Avocado slices

Chives, chopped

Sir Kensington’s Classic Ketchup

Jam

 

  

INSTRUCTIONS

For the heart-shaped bacon

  1. Preheat oven to 425.
  2. Line a baking sheet with tin foil.
  3. Cut bacon in half, so you have two short pieces of bacon. Use the two halves to form bacon into a heart shape on the baking sheet, overlapping generously.
  4. Bake for 10 minutes.

For the hash browns

  1. Shred the russet potato, using a cheese grater.
  2. Rinse shredded potato with water until the water runs clear. Squeeze to remove excess water. Pat dry with a paper towel.
  3. Transfer dried potato to a medium-sized bowl. Use your hands to crumble a BOU Beef Cube into the bowl. Add in flour, Parmesan cheese, chives, and egg. Use a fork to mix together, combining well.
  4. Heat ghee or unsalted butter in a skillet over medium heat.
  5. Form hash browns into two equal patties. Squeeze out excess liquid with your hands and form into a flat, round shape.
  6. Add both patties to the skillet. Use your spatula to form the hash browns into a heart shape (if desired).
  7. Cook on each side for 5 minutes.
  8. Transfer to a paper towel to drain before serving.

For the egg-in-a-hole

  1. Use a heart-shaped cookie cutter (optional) to cut a heart shape into the center of your bread. Set the center heart aside.
  2. Add one slice of bread to the same skillet you cooked your hash browns in, still heated over medium heat.
  3. Toast one side for 1 minute or just until browned. Flip the bread over and crack an egg into the center of the bread. Season with salt and pepper.
  4. Cook just until the white has set and the yolk is still runny.
  5. Transfer finished egg-in-a-hole to a plate, and cook the second in the same way.
  6. Once egg in a hole is cooked, feel free to toast your heart cutouts on the same pan.

For the Valentine’s Day Breakfast for Two

  1. Serve each plate with an egg-in-a-hole, hash brown patty, 3 bacon hearts, toasted heart shaped bread, avocado slices, jam, and Sir Kensington’s Classic Ketchup.
