INGREDIENTS


1 BOU Vegetable Bouillon Cube

1 pack Cece’s Veggie Noodle Co. White Sweet Potato Spirals

1 medium onion, sliced thin

1 tbsp Vital Farms Pasture Raised Butter

2 tbsp curry paste

1 15 oz can diced tomatoes or 3 fresh tomatoes, diced

1 15 oz can coconut milk

1 cup chickpeas

1 tsp salt

1 tbsp lemon juice


INSTRUCTIONS


In a medium pot, melt butter and saute onion. Once translucent, add in curry paste and tomatoes. When the tomatoes begin to reduce, add in coconut milk and BOU Vegetable Bouillon Cube. Stir until the cube has fully dissolved, then add chickpeas and bring to a simmer. Fold in Cece’s Veggie Noodle Co. White Sweet Potato Spirals and let simmer on medium high heat for four to five minutes. Remove from heat and stir in lemon juice, salt and pepper or even a dash or sugar, to taste. Garnish with green onions, and enjoy!
